Global hospitality firm Altamarea Group is seeking passionate and dedicated Butchers to join the opening team for Marea Beverly Hills, the first expansion of the iconic Marea in the U.S. outside New York.

Who We’re Looking For

As a Butcher at Marea Beverly Hills, you will work alongside top culinary talent in a collaborative, inclusive, and professional environment, contributing to the creation of extraordinary dining experiences. The ideal candidate will hold significant experience in the careful breakdown and preparation of whole fish and seafood, with an emphasis on maintaining the integrity of the product.

Key Responsibilities:

  • Work closely with the kitchen team to ensure that all protein preparations align with the menu requirements and maintain smooth kitchen operations
  • Accurately and efficiently break down and prepare various cuts of meat and seafood for service, ensuring consistency in portion size and presentation
  • Inspect and ensure that all meats and seafood meet the highest standards of quality and freshness, handling them according to established safety and sanitation procedures
  • Assist in inventory coordination with management and maintain stock levels for all meats and seafood
  • Place orders as necessary to meet the restaurant's needs while minimizing waste.
  • Properly operate and maintain butchery equipment, ensuring all tools are kept in excellent working condition
  • Perform other duties as requested by management

Qualifications:

  • At least 2 years of proven experience as a butcher, preferably in a fine-dining environment.
  • Strong knowledge of various cuts of meat and seafood, and proficiency in butchering techniques.
  • Ability to work efficiently in a fast-paced environment while maintaining attention to detail.
  • A commitment to safety, cleanliness, and high-quality standards.
  • Excellent communication and teamwork skills.
  • Knowledge of Italian Cuisine is a plus, but not required.
